Skyscrapers go up in months now, but what can we do if we don't rush things, what kind of new things would be possible by growing structures, call it slow architecture? 

As one example, in India there are actually bridges that villagers have coaxed out of the roots of living trees over years.  Here's a photo (by anselmrogers), see cnn for a nice story, and wikipedia's page on living bridges for more.
