The best most elaborate carving of vegetables I ever saw was La Noche de Las Rabanas (Night of the Radishes) in Oaxaca in the 90's.
Best this recent carrot carving is pretty dang impressive - though as customer and head-chef Gayle M. says "That's a lot of work to do before cooking it for dinner!"
